The ANAHEIM was one of the original Hatch varieties and was known as New Mexico No. 9. It was renamed Anaheim after it was taken to California where it was commercially grown. Although it is no longer considered a Hatch variety because of its commercial growth outside of New Mexico, it still has lots of the flavour that Hatch chillies are renowned for.

The ANCHO POBLANO is a very popular Mexican chilli. Called Poblano when fresh and Ancho when dried, this chilli has lots of fruity flavour with just enough heat to add spiciness to any dish. The JOE E PARKER is another of the very popular varieties grown in the Hatch Valley, an area that stretches along the Rio Grande in New Mexico. The soil and growing conditions in the Hatch Valley create a unique growing environment for the chillies which are renowned for their delicious flavour. Hatch chillies are typically picked in the green stage of development and have lots of flavour which is further enhanced through frying or roasting. These chillies are often consumed roasted throughout the American southwest during autumn. The Joe E Parker is the improved version of the original New Mexico 6-4.

The MULATO is another of the popular Mexican chillies. It is similar to the Ancho Poblano, but it ripens to a deep brown and has a sweeter, smokier flavour. This chilli is used to make mole sauces and is also an ideal size and shape for stuffing and baking.

The PIMIENTOS DE PADRON is an heirloom chilli that was brought to Spain in the 16th century by monks returning from the Spanish colonies in South America. These chillies are traditionally picked when green and fried in olive oil and salt to make a very popular and delicious Spanish tapas. The Pimientos de Padron is also referred to as the roulette chilli because, although generally mild in the green stage of development, some chillies will develop more heat as they mature. The fun is not knowing which ones will be hotter.

Its flesh has little to no heat, but a tingle of heat can be detected in its placenta. Great in salads and can be stuffed and baked. It has an unusual and attractive shape, making the plant an interesting one to have in the garden.
