Description:

The BIG JIM is one popular varieties grown in the Hatch Valley, an area that stretches along the Rio Grande in New Mexico. The soil and growing conditions in the Hatch Valley create a unique growing environment for the chillies which are renowned for their delicious flavour. Hatch chillies are typically picked in the green stage of development and have lots of flavour which is further enhanced through frying or roasting. They are often consumed roasted throughout the American southwest during autumn. Growing up to 30cm long, the Big Jim is one of the larger chillies in the world.

Description:

The BISHOP’S CROWN (also known as Bell, Joker’s Hat, Balloon) is an attractive chilli with an unusual shape, making the plant an interesting one to have in the garden. The chilli has a good medium heat with lots of fruity apple-like flavour and a crunchy flesh. Great in salads and can be stuffed and baked. 

*A milder version from Brazil, that has little to no heat, is called the Ubatuba Cambuci. Seeds for this variety can be found in the ‘Mild’ section of the store.

The CAYENNE RED is named after the town of Cayenne in French Guiana. It is the larger (thicker) of the cayenne chillies & is milder than the Cayenne Long Thin, being a medium to hot chilli. It has lots of sweet spicy flavour. Prolific bush.
