Hatch Chile refers to any of the chilli varieties grown in the Hatch Valley, an area that stretches along the Rio Grande in New Mexico. The soil and growing conditions in the Hatch Valley create a unique growing environment for these chillies which are renowned for their delicious flavour. The Hatch varieties, which range from mild to very hot, are picked while still green and are often consumed roasted throughout the American southwest during autumn.

Description:

The ANAHEIM was one of the original Hatch varieties and was known as New Mexico No. 9. It was renamed Anaheim after it was taken to California where it was commercially grown. Although it is no longer considered a Hatch variety because of its commercial growth outside of New Mexico, it still has lots of the flavour that Hatch chillies are renowned for.
